From the picked and dried plants are extracted the principal aromatics which are then infused in alcohol. The temperature, the time and the degree of alcohol produce the desired taste. The finished infusion is extracted. In the press, the infused liquid is separated from the vegetal part to obtain the last juice which will be incorporated in to the infusion. These plants thus pressed still contain numerous aromas and essences. It is only by distilling them in an ancient still that these are extracted..

Certain infusions are still distilled for more fineness. By mixing infusions and distils, one obtains a pefumed spirit. It is this perfumed spirit, issued from each of the plants and spices that is then assembled together. The final assemblage, which must be perfectly done, gives birth to this symphony of aromas and perfumes which makes the Pastis Henri Bardouin.
